Total number of SN2 reactions involved in the reaction is three.
In first SN2 reaction methoxy group is replaced by OH group (i.e. CH3 group replace by H+of HI) .
In second SN 2 reaction another methoxy group get replaced by OH.
In third SN2 reaction OH get replaced by iodide group.
